Homemade Sausage Pie: A Hearty and Flavorful Delight

Serves: 6-8
Prep Time: 25 minutes
Cook Time: 40 minutes
Total Time: 1 hour 5 minutes

Ingredients:

  • 1 lb sausage (Italian, pork, or your preferred variety)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 2 tablespoons flour
  • 1 ½ cups milk
  • ½ cup chicken broth
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 2 pie crusts (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions:

  1. Preheat the Oven
Preheat your oven to 375°F (190°C). Prepare a 9-inch pie dish by lightly greasing it with olive oil.
  2. Cook the Sausage Filling
Heat olive oil in a skillet over medium heat. Add the sausage and cook, breaking it up with a spatula, until browned and cooked through. Remove the sausage from the skillet and set aside.
  3. Sauté Onion and Garlic
In the same skillet, add the chopped onion and garlic. Cook for 3-4 minutes until soft and fragrant. Add the thyme, and season with salt and pepper.
  4. Make the Creamy Filling
Sprinkle the flour over the onions and garlic, stirring constantly to create a roux. Slowly add the milk and chicken broth, whisking to prevent lumps. Let it simmer for 2-3 minutes until the sauce thickens. Remove from heat, stir in the shredded cheese, and fold in the cooked sausage. Set aside to cool slightly.
  5. Prepare the Pie Crust
Roll out one pie crust and line the bottom of the pie dish. Pour the sausage mixture into the pie shell and smooth the top.
  6. Add the Top Crust
Roll out the second pie crust and place it over the filling. Press the edges together to seal the pie. Use a knife to make small slits in the top crust for steam to escape.
  7. Egg Wash and Bake
Brush the top of the pie with a beaten egg to give it a golden, shiny finish. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Let It Cool and Serve
Allow the sausage pie to cool for 10 minutes before slicing. Serve with a fresh green salad or roasted vegetables for a complete meal.
