Milk Brioche Rolls: Soft, Buttery, and Irresistible

Ingredients:

  • 3 ½ cups all-purpose flour (plus extra for dusting)
  • ¼ cup granulated sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 teaspoon salt
  • ½ cup whole milk (warm, about 110°F/43°C)
  • ¼ cup water (warm, about 110°F/43°C)
  • 3 large eggs (room temperature)
  • ½ cup unsalted butter (softened and cut into cubes)
  • 1 egg yolk (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Sesame seeds or poppy seeds (optional, for garnish)

Instructions:

  1. Activate the Yeast
    In a small bowl, mix the warm milk, warm water, and a teaspoon of sugar. Sprinkle the active dry yeast over the mixture and stir lightly. Let it sit for 5-10 minutes until the yeast becomes foamy.
  2. Prepare the Dough
    In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture and eggs. Using a dough hook on a stand mixer (or by hand), mix on low speed until the dough begins to come together. Gradually add the softened butter, a few pieces at a time, and continue kneading for 8-10 minutes until the dough is smooth and elastic.
  3. First Rise
    Transfer the dough to a lightly floured surface and knead for a few minutes by hand. Place it in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 ½ hours, or until doubled in size.
  4. Shape the Rolls
    Once the dough has risen, punch it down to release the air. Divide it into 12 equal portions. Roll each piece into a smooth ball and place them on a greased or parchment-lined baking sheet, spacing them about 2 inches apart.
  5. Second Rise
    Cover the rolls with a clean cloth and let them rise for another 45 minutes to 1 hour, or until doubled in size.
  6. Preheat the Oven
    Preheat your oven to 375°F (190°C).
  7. Egg Wash
    In a small bowl, whisk together the egg yolk and 1 tablespoon of milk. Gently brush the tops of the rolls with the egg wash for a glossy finish. Sprinkle with sesame seeds or poppy seeds if desired.
  8. Bake the Rolls
    Bake the rolls for 15-20 minutes, or until they are golden brown on top. If they start to brown too quickly, cover them loosely with aluminum foil.
  9. Cool and Serve
    Remove the rolls from the oven and let them cool on a wire rack. Serve warm with butter, jam, or use them for sliders or sandwiches.
