Best Egg Rolls

These homemade egg rolls are crispy, golden, and packed with a flavorful filling of seasoned pork and vegetables. They’re perfect as an appetizer, snack, or part of a main course. Serve with a side of sweet chili sauce, soy sauce, or your favorite dipping sauce!

Ingredients:

For the Filling:

• 1 lb ground pork (or chicken, beef, or shrimp)

• 1 tbsp vegetable oil (for cooking the meat)

• 2 cups shredded cabbage

• 1 cup shredded carrots

• 3 green onions, finely chopped

• 2 cloves garlic, minced

• 1 tbsp soy sauce

• 1 tbsp oyster sauce

• 1 tsp sesame oil

• Salt and pepper, to taste

For Assembling:

• 12-15 egg roll wrappers

• 1 egg, beaten (for sealing the wrappers)

• Vegetable oil, for frying

Instructions:

Step 1: Prepare the Filling

1. Heat a tablespoon of oil in a large skillet over medium-high heat. Add the ground pork and cook until browned and crumbled, about 4-5 minutes.

2. Add the garlic, cabbage, carrots, and green onions to the skillet. Stir well and cook for another 3-4 minutes, until the vegetables are softened.

3. Stir in the soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste. Cook for an additional 1-2 minutes, then remove from heat and let the filling cool slightly.

Step 2: Assemble the Egg Rolls

1. Lay an egg roll wrapper on a clean surface with one corner pointing toward you, like a diamond shape.

2. Place about 2 tablespoons of the filling in the center of the wrapper.

3. Fold the bottom corner of the wrapper over the filling, then fold in the sides.

4. Roll the wrapper tightly, sealing the top corner with a little beaten egg. Repeat with remaining wrappers and filling.

Step 3: Fry the Egg Rolls

1. Heat about 2 inches of vegetable oil in a deep pot or skillet to 350°F (175°C).

2. Carefully add the egg rolls to the hot oil, a few at a time, without crowding the pot.

3. Fry for 3-4 minutes, turning occasionally, until they’re golden brown and crispy.

4. Use a slotted spoon to transfer the egg rolls to a paper towel-lined plate to drain.

Step 4: Serve

1. Serve the egg rolls hot with your choice of dipping sauce, such as sweet chili sauce, soy sauce, or spicy mustard.
