•1 lb (450g) sausage (breakfast sausage or Italian sausage)

•1 (8 oz) package cream cheese, softened

•1 tsp garlic powder (optional)

•Salt and pepper to taste

•1 package puff pastry sheets (thawed according to package instructions)

•1 egg (for egg wash)

Instructions

1.Cook the sausage: In a large skillet over medium heat, cook the sausage until browned and fully cooked. Drain any excess fat and let it cool slightly.

2.Prepare filling: In a mixing bowl, combine the cooked sausage, softened cream cheese, shredded cheddar (if using), garlic powder, salt, and pepper. Mix until well combined.

3.Prepare pastry: Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into squares (around 3×3 inches works well).

4.Fill the pastries: Place a spoonful of the sausage and cream cheese mixture in the center of each pastry square. Fold the pastry over the filling to form a triangle, pressing the edges to seal. Use a fork to crimp the edges for a decorative seal.

5.Egg wash: In a small bowl, whisk the egg with a splash of water. Brush the tops of each pastry with the egg wash to give them a golden, shiny finish.

6.Bake: Preheat your oven to 400°F (200°C). Place the pastries on a lined baking sheet and bake for 15-18 minutes, or until golden brown and puffed.

7.Serve: Let cool slightly and serve warm.
