Apple Fritters With Vanilla Bean Glaze

Ingredients:

For the Apple Fritters:

  • 2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • ⅔ cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • Vegetable oil, for frying

For the Vanilla Bean Glaze:

  • 1 ½ cups powdered sugar
  • 1 tbsp butter, melted
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 2–3 tbsp milk

Instructions:

1. Prepare the Fritters:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, beat the eggs and then stir in the milk, vanilla extract, and melted butter.
  3. Add the wet ingredients to the dry ingredients, stirring until just combined (don’t overmix).
  4. Fold in the diced apples until evenly distributed.

2. Fry the Fritters:

  1. Heat oil in a deep pan or skillet over medium heat to about 350°F (175°C). Use enough oil so the fritters can float while frying.
  2. Scoop the batter with a spoon or small ice cream scoop and gently drop it into the hot oil.
  3. Fry for 2–3 minutes per side, until golden brown and cooked through. Fry in batches to avoid overcrowding.
  4. Remove the fritters with a slotted spoon and drain them on paper towels.

  1. In a bowl, whisk together the powdered sugar, melted butter, vanilla bean paste, and milk. Adjust the consistency by adding more milk if needed until the glaze is smooth but not too runny.

4. Glaze the Fritters:

  1. Dip each fritter into the vanilla bean glaze or drizzle it on top.
  2. Let them set on a wire rack for a few minutes to allow the glaze to harden slightly.
