Garlic and Herb Baked Potatoes

Ingredients

  • 4 medium-sized russet potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Potatoes: Scrub the potatoes under running water to remove any dirt. Pat them dry with a towel. Prick each potato a few times with a fork to allow steam to escape during baking.
  3. Season the Potatoes: In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper. Rub this mixture all over the potatoes, ensuring they are well-coated.
  4. Bake the Potatoes: Place the seasoned potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for about 45-60 minutes, or until the potatoes are tender and the skins are crispy. You can check for doneness by inserting a fork into the potatoes; it should slide in easily.
  5. Serve: Once baked, remove the potatoes from the oven and let them cool for a few minutes. Slice them open and fluff the insides with a fork. You can add more olive oil, butter, or sour cream, and sprinkle with fresh parsley or chives before serving.

Tips

  • For an extra crispy skin, you can add a bit of coarse sea salt on the skin before baking.
  • Feel free to adjust the herbs based on your preference or what you have on hand!
