Shrimp Scampi Pasta

Dive into a plate of succulent shrimp scampi pasta, bursting with flavors of garlic, lemon, and Parmesan! This easy-to-make dish is perfect for a cozy night in or a family dinner!

 

Ingredients:

 

1 pound shrimp, peeled and deveined

3 tablespoons butter

2 tablespoons olive oil

Salt and pepper to taste

3 cloves garlic, chopped

1 shallot, finely chopped

1/2 cup vegetable broth or chicken broth

Juice of 1 lemon

Cooked pasta of your choice

Fresh parsley, chopped

Grated Parmesan cheese

Instructions:

 

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet. Sauté until they are pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

 

In the same skillet, add the remaining butter and olive oil. Sauté the chopped garlic and shallot until fragrant, about 1-2 minutes.

 

Pour in the vegetable broth or chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Season with additional salt and pepper to taste. Allow the mixture to simmer for 2-3 minutes to reduce slightly.

 

Add a little pasta water to the skillet to create a sauce consistency, then stir to combine.

 

Return the cooked shrimp to the skillet along with the cooked pasta. Toss everything together until the pasta is coated in the sauce and heated through.

 

Remove the skillet from the heat and sprinkle with chopped fresh parsley and grated Parmesan cheese.

 

Serve the shrimp scampi pasta immediately, garnished with additional Parmesan cheese and parsley if desired.
